A superior category of olive oil, obtained directly from olives and using only mechanical processes. Its properties and qualities, both biological and organoleptic, remain unchanged, together with its strong taste and smell. Its degree of maximum acidity is equal to or less than 1° and its tasting note is rated at a minimum of 5.5.
