Au 100% Hojiblanca\u00a0<\/b>is made with this variety which is\u00a0typical of Andalusia<\/strong>\u00a0(Cordoba, Malaga and Sevilla mainly), whose name comes from the silvery underside of the leaves of the olive trees. The Hojiblanca olives are\u00a0large and thick<\/strong>\u00a0and the oil from them is one of the most highly valued.<\/p>\n Hojiblanca oil is a\u00a0golden\u00a0<\/strong>colour with a\u00a0mild\u00a0<\/strong>flavour which is slightly sweet, with a\u00a0fruity aroma<\/strong>\u00a0that smells of fresh grass, a slight bitterness that reminds us of avocado and unripe fruit; it is somewhat spicy in the throat and has a final taste of\u00a0almonds<\/strong>, one of its most distinctive characteristics.<\/p>\n Its composition is\u00a0very balanced<\/strong>, with less saturated fatty acids, a large amount of vitamin E and a medium content of polyphenols, which gives it a smoothness and sweetness.
