Aui 100% ARBEQUINA is only manufactured from Arbequina olives, a variety that has a small size but that is also highly regarded, originating from Arbeca (Lleida) and found all over Cataluna. It ripens very early and has a very high oil production, which provides a thick and fluid oil.

It is a very aromatic and fruity oil, very smooth with a yellowish colour (or slightly green at the beginning of the season), with a taste of unripe almonds that is very pleasant and aromas of wild ripened fruits and also those from the kitchen garden (apples, tomatoes), or sometimes exotic ones. It is not at all bitter or spicy, but harmonious, mild, light and delicate.

As it is a very fresh and young oil, Arbequina olive oil is somewhat more delicate than other varieties with regards to oxidation. Due to this, once packaged it is very important to store it away from the light and heat.

Au 100% Picual is an extra virgin olive oil that has been exclusively obtained from olives that are of the Picual variety, the most important in the world. They originate from Jaen, and their name comes from the shape of the fruit, which finishes in a peak.

This virgin olive oil from Castellar (Jaen) is a mono-varietal of the Picual variety. It has an intense green colour with a large body, and no acidity. It has a greenish fruit, fresh aroma with touches of apple and wood, with a mildly bitter and slightly spicy taste.

The Picual variety is the richest in oleic acid and its high content of natural anti-oxidants, vitamin E and polyphenols, make it the most stable, balanced and healthy variety, which is the most resistant to temperature variations, making it excellent to use in cooking. It is ideal for salads, gazpachos, salmorejos, scrambled eggs and griddled vegetables, fresh meat and fish, casseroles, pastas…

Au 100% Hojiblanca is made with this variety which is typical of Andalusia (Cordoba, Malaga and Sevilla mainly), whose name comes from the silvery underside of the leaves of the olive trees. The Hojiblanca olives are large and thick and the oil from them is one of the most highly valued.

Hojiblanca oil is a golden colour with a mild flavour which is slightly sweet, with a fruity aroma that smells of fresh grass, a slight bitterness that reminds us of avocado and unripe fruit; it is somewhat spicy in the throat and has a final taste of almonds, one of its most distinctive characteristics.

Its composition is very balanced, with less saturated fatty acids, a large amount of vitamin E and a medium content of polyphenols, which gives it a smoothness and sweetness. It is also more sensitive to oxidation, which is why it should be stored away from the light and air.
